For centuries, it was the daily meal of farmers and butteri, the traditional cattle herders of the Maremma countryside. Unlike other soups, where vegetables are usually prepared with a saut\u00e9 base and the addition of animal fats, here the ingredients are cooked directly in water (hence the name, which literally means \u201ccooked water\u201d). It is prepared with seasonal vegetables, onion, potatoes, tomatoes, stale homemade bread and extra virgin olive oil. One of the most loved versions is the one with chicory. Despite its simplicity, it is a dish surprisingly rich in flavour. Every family preserves its own recipe, with small variations that make each preparation unique.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Fieno di Canepina with meat rag\u00f9<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">The name always intrigues those who are not from the area, but don\u2019t be misled: the \u201chay\u201d has nothing to do with grass. It is actually a handmade egg pasta whose preparation requires experience and precision. The pasta sheet is rolled out until it becomes so thin that it almost melts in the mouth, then rolled and cut into very narrow strips, resembling, as the name suggests, strands of hay. Originally from the small village of Canepina, this pasta has very ancient origins dating back to the Middle Ages. The most common sauce is a meat rag\u00f9, but it is also excellent in a lighter version with porcini mushrooms from the Cimini Mountains.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Lombrichelli alla viterbese<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Among the most beloved first courses of Tuscia\u2019s cuisine, lombrichelli cannot be missed. They are a type of fresh pasta, similar to spaghetti but thicker and larger, whose name comes from their shape, reminiscent of a small earthworm. They are made with water, flour and a pinch of salt, shaped by hand and then left to dry for a couple of hours before cooking. Thanks to their thickness, they hold the sauce perfectly. The Viterbo-style version generally includes a simple but flavourful seasoning made with tomato, garlic, chilli pepper and grated Pecorino Romano cheese. The simplicity of the ingredients enhances the taste of the pasta and makes this dish one of the symbols of local culinary tradition.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Pignattaccia<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Pignattaccia is perhaps the true symbol of Viterbo\u2019s humble cuisine, born from the desire to waste nothing and transform simple ingredients into a dish full of flavour. It can be described as a kind of meat and vegetable stew (traditionally prepared with less valuable cuts of beef and pork), although it differs from a classic stew in several ways. Its name comes from the cooking technique: in the past, the meat was placed inside a terracotta pot, alternating layers of meat and vegetables, then the pot was covered with parchment paper and sealed with a lid. The secret lies in the long preparation time, which can exceed two or three hours over low heat. The result is extremely tender meat that falls apart easily with a fork.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Chickpea and chestnut soup<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Chickpea and chestnut soup is a dish that perfectly expresses the flavours of Tuscia and is deeply connected to the local rural tradition. The main ingredient is the chestnut from the Cimini Mountains, which has always been a fundamental resource for local communities. The combination of chickpeas and chestnuts creates a nutritious, creamy and flavourful soup, perfect during autumn and winter evenings. Garlic, rosemary, chilli pepper, extra virgin olive oil and slow cooking complete a recipe that enhances simple but high-quality ingredients.
